Eggless Banana Bread :
Banana Bread is one of my favorites for breakfast on Sunday mornings. I like to make Banana Bread on Sunday mornings and I'll have yummy breakfast for the next few days, especially while I am rushing with my weekday schedule.
It's often we have bananas on the kitchen counter, getting overripe and no one wanting to eat as it’s become overripe. You try to make a smoothie but how many bananas could you use in one or two cups. For Banana Bread, it's perfect over time.
The KEY ingredient here is Bananas. Which is high on potassium, which meets about 10% of your daily potassium needs. Potassium helps your body maintain a healthy heart and blood pressure. In addition, bananas are low in sodium. The low sodium and high potassium combination helps to control high blood pressure.
Let's make Banana Bread to make a yummy Sunday Morning.
It's very easy and with all basic ingredients it comes out in less than an hour.
Ingredients
Ripe Bananas: 3
Wheat flour: 1 ½ cup
Brown Sugar: 1 cup
Old fashioned Oats: 2tsp (optional)
Cinnamon Powder: 1tsp (optional)
Milk: ½ cup
Butter: 3 tsp (melted)
Banking soda: 1 tsp
Baking Powder: 2 tsp
Salt: 1 pinch
Vanilla extract: 2 tsp
Method:
Preheat the oven to 350 degrees.
Mix the dry ingredients except Oats together in a large mixing bowl.
In a separate bowl, mash the bananas well.
Stir the butter, milk, vanilla extract and bananas.
Add the banana mixture into the mixing bowl with the dry ingredients.
Mix gently by hand, just enough to form a thick, clumpy batter. If the mixture seems too dry, you can add one more Banana to make your consistency.
Pour batter into a greased loaf pan, add oats on top of your batter and bake for 45 minutes or until the bread is a deep golden brown and a knife inserted in the center comes out clean.
Tips :
substitute Milk with soy milk, and butter with Coconut oil to make this recipe totally Vegan.
You can make small muffins instead of bread loaf for easy storage and perfect for To-go lunches.
