Patra ( Colocasia leaves) or Taro
Patara leaves are the heart-shaped leaves of the taro plant (Colocasia esculenta), also known as a Elephant Ears due to its shape.Grown in subtropical and tropical regions.
While generally known for its , Arabi (starchy root), the leaves of the taro plant also serve as a staple food in India.
It's full of vitamin A and Vitamin C. The two key nutrients keep you away from chronic diseases like Cancer, They act as a powerful antioxidants to play a role.
It’s important to note that the raw leaves are poisonous before cooking. Never consume raw leaves.
Here is easy Recipe you'll love it. My daughter calls it, Indian style steam Sushi.
Recipe:
- 10 big or 20 small Colocasia leaves
- 1.5 cup besan
- Salt according taste
- 2 tsp coriander powder
- 1/2 tsp red chili powder
- 1/4 tsp turmeric powder
- 3 tsp sugar ( optional )
- 4-5 tsp tamarind paste ( lemon juice)
- 3/4 cup Water
Ingredients for tadka:
- 1 tablespoon oil
- 1 pinch asafoetida
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1 tablespoon sesame seeds
- 2 green chillies , chopped
- 1 tbsp fresh coriander leaves , for garnish
Method :
- Remove the stem and wash the leaves properly, taking care not to break the leaf.
- Make a thick batter of besan( chickpeas flour) by adding water little by little. Add salt, suagar, red chili powder, coriander powder, turmeric powder,tamarind paste
- Apply a layer of besan batter on one side of leaf put next size leaf on a top repeat couple of leaf top on another( About 4-5 leaves) going on small on size and roll the leaves in such that the besan paste stay inside.
- Repeat the same for the rest of the leaves.
- Steam the rolls in a steamer for 15 minutes until the besan gets cooked.
- After cooling, cut the rolls into bite-sized pieces.
- Heat oil in a pan then add asafoetida, mustard seeds, cumin seeds and sesame seeds.
- When the seeds start to sputter, add green chillies. Sauté for few seconds then add the cut rolls.
- Sauté for 5 minutes and remove from heat.
- Sprinkle some and fresh coriander leaves.
- Serve hot as a snack ( I can eat as a meal )
