BOMBAY SANDWICH: One of the most Indian popular street foods, which you can find all over National and International Indian restaurants. Everywhere it's only called by one name: Bombay Masalas Sandwich.
When someone says Bombay sandwich, it means they are only talking about one and only ultimate feeling-- spicy yet tangy with ketchup (it can be called sauce too). Something you can't resist.
Bombay sandwich is the only sandwich I knew of, until I came to know about Subway sandwiches.
All over India, you'll find a Bombay Sandwich stall on the Entrance of Universities, Malls, Market. Everyone knows one Sandwich wala from their Hometown.
A slice of bread became the heart of Mumbai around the 1970s. Indian bread has touch of Portuguese. In India, bread can also be called Pav.
Over time, there have been varieties in different veggies and kind of sandwiches… one regular stall owner can have 5-10 different kinds of sandwiches on his menu. Few of them I can tell you: Sada Sandwich (not grilled), Toast Sandwiches (Grilled Sandwiches), Cheese Toast Sandwiches, Butter toast sandwiches, Schezwan sandwiches and so on...
but few things remain the same: 1) Green chutney 2) butter, 3) mash potatoes. You can always add more veggies.
Here is the very simple but mouthwatering recipe for Bombay Masala Sandwich.

Prep Time: 20 min
Cook Time: 10 min
Ingredients:
Bread: 8 slices
Potatoes: 1 cup (boiled)
Onion: ½ cup (sliced cut)
Tomatoes: ½ cup (sliced cut)
Bell peppers: 1/4cup (sliced cut)
Butter: ¼ cup
Salt: as per your taste
For Tempering
Oil: 2 tsp
Turmeric powder: 1tsp
Muster seeds: 1tsp
Cumin seeds: 1tsp
Curry leaves: 3-4 (optional)
Green chillies: 1tsp (chopped)
Garam masala : ½ tsp (optional)
Cilantro: 3-4 Tsp (chopped)

First, in big a bowl, add mashed, boiled potatoes.
Start your Tempering on small pan- add oil
Once oil is hot, add mustard seeds, cumin seeds, green chillies, curry leaves, Garam masala powder and salt, tumric powder.
Add this hot oil on top of mashed potatoes, add salt and cilantro.
With a spatula mix all ingredients together.
Now on two pieces of sliced bread, spread butter and green Chutney.
Put some of your potatoe mix on one slice of bread and on top of it, add bell peppers, tomato, onion, carrots.
Close it with another slice of bread and toast (grill) the sandwich.
Spread some more Butter on top of your grilled sandwich.
Cut it in half and serve it hot with your favorite ketchup and some more Green Chutney.
You can enjoy the sandwich as Breakfast, Lunch, or Snack with Hot Chai. Chai
Tips:
Use any bread you like (any I mean 'buy one get one free' too) but the basic sandwich bread works better.
If you don't have Green Chutney, add some sriracha sauce.
You can skip Tempering part but the taste would be compromised.
